Brief Description of Courses Per Semester

Semester IV
Food Biochemistry / Biokimia Pangan
4 credits

Prerequisite(s): General and Organic Chemistry
The course is a comprehension of the biochemistry of cells, biomolecules, biochemistry of amino acids and protein and biochemistry of photosynthesis. The topics cover structure, function and kinetics of enzymes; example of functional protein (haemoglobin and myoglobin, actin and myosin); metabolism reaction (glycolysis, Krebs Cycles, electron transport, oxidation, biosynthesis, or carbohydrate and lipids), structure of nucleic acid and their metabolism (replication, transcription and protein biosynthesis). The laboratory work includes practising extraction of crude protein, protein analysis using Lowry and Bradford method, enzyme activity determination, the effect of temperature and pH on enzyme activity and velocity. 
 

Food Microbiology / Mikrobiologi Pangan

Prerequisite(s): Biology
The course provides the students with an understanding of microbial growth factor (intrinsic, extrinsic, implicit and processing factors) during food processing, microorganisms as a cause of food deterioration and change in raw materials and how to prevent contamination. The course includes describing the role of desirable microorganisms in food fermentation and the role of undesirable microorganisms in food spoilage. Food microbiology also studies the standard methods of enumeration and identification of bacterial indicators, fungi, yeast, mold and microbial pathogenic in food materials. The HACCP (Hazard Analysis Critical Control Point) system from raw material to storage as an integrated system is also discussed. Laboratory work performed is related to the lectures in class including isolation, detection, identification and enumeration of microorganism in food material systems.

This subject is a comprehension of unit operations in the food industry with emphasizing on preliminary operations (cleaning and processing of raw material, sorting and grading of foods, reduction), conversion operations (reduction and screening) of solids, mixing and emulsification, filtration and membrane separation, centrifugation, solid-liquid extraction and expression, crystallization), and preservation operations (heat processing, evaporation, dehydration, freezing/refrigeration). The course also includes laboratory work such as the use of the sensor in the food industry, mixing of granules and liquids, drying and size reduction.
 

Statistics and Experimental Design / Statistika dan Rancangan Percobaan
4 credits

Prerequisite(s): Mathematics 
This course is a comprehension of basic concepts in statistic and their application, data types in statistics, control of tendencies and variance, five parameters of data, advantages and disadvantages of statistic, the testing of statistical software to make statistic descriptive. The course also includes applied statistics used in research including data collection, sampling method and data analysis (Regression and Correlation Analysis, Analysis of Variance, Non-parametric test). The subject will also discuss various experimental design such as single, two or more factors (Factorial Design, Complete Randomized Design, Complete Randomized Block Design, etc).

 

Basic Managements / Dasar-Dasar Manajemen

The course is an introduction to the management role as a part of economics. The scopes cover management functions, principles of organization and organizational characteristics.

Christian Worldview I / Wawasan Dunia Kristen I

Prerequisite(s): None
Introduction materials about the insights of the world generally include definitions, interests, elements, and the framework of justification. In a more specifics aspect will also be discussed the uniqueness of the Christian Worldview. Because Christian theology, especially dogmatics is at the core of Christian worldview, students will be introduced to theology, in the introduction, and its significance in building and shaping the Christian world. The fundamental role of Scripture in theology and the insights of the world will also be explained by reference to the characteristics of its revelation and in the context of organics interconnection with other parts of revelation, its infallibility, its historical reliability, its canonization, its interpretation, and its function as epistemic principle for the knowledge of God and His creation. The knowledge of God rooted in the Scriptures as the core of the Christian understanding of all things will be elaborated with reference to its possibility, certainty, and content which consists of: the existence of God, His existence, His attributes (communicable and incommunicable) His Trinity, His Decree, His creation (creation and providence), and its implications both metaphysically and epistemically. The main thing to accomplish in this elaboration is the knowledge of God that will lead to a deeper personal relationship with God and better understanding and practice according to His will.


Philosophy of Science / Filsafat Ilmu Pengetahuan

Philosophy of Science is a liberal arts course that provides an insight into the Christian world on the ontological, epistemological and axiological dimensions of modern science studied in various faculties. In the liberal arts curriculum, this course includes core knowledge that teaches philosophical presuppositions of the knowledge of God (the creators of the universe), the self (the subject of knowledge) and the world (nature and society as the object of knowledge). For this purpose, the lecture focuses on two objects. First is nature and method science, such as: what is science, how its classification, how the work of the natural science and the social sciences etc. The second point is the metaphysical, epistemic and axiological insight that emerge around science and its development, such as the conflict between the scientific and religious insight, the problems of scientific neutrality, science and ecological, science and gender, and human imagery-generated images. The whole topic of the discussion will be reflected and commented critically from the perspective of the Christian worldview and its relationship to the objective of holistic and transformational education of Liberal Arts at Universitas Pelita Harapan.
